How will my turkey arrive?
Your turkey will come in an insulated shipping kit to keep your bird nice and cool (or frozen).
Most of our kits are made from cardboard and GMO-free corn insulated panelling. The panelling may be composted, thrown out, or dissolved in water.
In fact, if you dissolve the panelling in a bucket of water overnight, you may use it to water your plants. It’s a great plant food! Otherwise, you can place small pieces of it in a sink and run water over it. It’s safe for pipes, septic, and waste treatment facilities.
Will the turkey be fresh, never-frozen?
For logistical reasons, we receive and store Idle River heritage turkeys frozen. We will begin the thawing process for you, however.
Your bird may arrive frozen, partially-frozen, or thawed but nice and cool to the touch.
Isn’t a fresh, never-frozen bird better?
We don’t think so. But, who cares? It’s still guaranteed to be the best turkey of your life (conditions apply: see above or below)!
Are these turkeys free-range?
A thousand times yes! In fact, I’d say they’re even better than free-range!
For a turkey to be considered free range, they need to be given access to the outdoors for 51% of their lives. And, contrary to popular belief, this usually involves large, outdoor sheds where tens of thousands of turkeys are kept together.
Idle River Farms’ turkeys far exceed those minimum requirements. Case in point, look at picture of the turkey near the top of this page. That was taken by the Burdicks at Idle River Farms. Clearly, these birds enjoy the open air and are not penned up by the ten-thousands like other “free-range” birds.
What are the main differences between a heritage turkey and a conventional turkey?
Besides the very obvious heightened flavor, the main difference is that heritage turkeys’ breast to leg-and-thigh ratio is well proportioned. Conventional turkeys are bred to exaggerate the ratio of breast meat to leg and thigh meat.
Another difference is that you may notice some black pin feathers in the skin of the bird. Completely normal! They disappear after cooking. Pin feathers are also present in a conventional turkey, only they are white and therefore unnoticeable.
May I choose the turkey breed that I receive? Will I know what breed I’m receiving?
Once the birds have been harvested and de-feathered it is impossible to tell their breed (their feather patterns identify breed type). For this reason, we are unable to offer you a specific breed or tell you what breed you are receiving.

The cooking instructions are simple. They involve:
- roasting your turkey at 325 degrees Fahrenheit with minimal stuffing (just use fresh herbs)
- basting and checking the internal temperature often, and
- removing it from the oven as soon as slicing its skin yields clear juices (as opposed to red juices).
Over-cooking your turkey is possible, and you shouldn’t expect superior results if you do. Faithfully follow these directions, and you will not overcook the bird.
